#Sugar sounds so sweet ; but do you know how it produced and what are the various types of sugar ?

Updated: Oct 21, 2021

Let us talk on various grades and chemical compositions ; though it just could be interesting to those who are probably in this trade.

Would mostly talk on refining process adopted in Brazil and South America and Indian grade . We would keep our discussion on mostly technical specs .

BRAZIL & SOUTH AMERICAN GRADE SUGAR

What is #ICUMSA?

International Commission for Uniform Methods of Sugar Analysis (ICUMSA)

The International Commission for Uniform Methods for Sugar Analysis (ICUMSA) is a regulatory organization which sets the global standard for quality control in sugar. ... Typically, an ICUMSA rating of 45 indicates a highly refined white sugar of high purity, whereas brown sugar would have a rating of around 1000.

What is #ICUMSA 600 -1200 sugar

Known as brown sugar, Icumsa 600-1200 is 100% raw refined and is produced after the first crystallization of sugar cane. This sugar is thicker than white sugar (known as Icumsa 45) and its color is brownish. Raw brown sugar from sugar cane, when fully refined, contains about 70% white sugar.

SOFT BROWN 14,000 #ICUMSA 14000 SUGAR

Soft Brown Sugar

The main characteristics of brown sugar are fine, dusty grain and liable to be lumpy, light to dark brown, with natural smell of sugar cane. It is directly processed from sugar cane with either a traditional method of vacuum-pan or modern method. It can be used as a substitution of white sugar, widely used in soya sauce, coconut sugar cake, an in general confectionary.

#ORGANIC SUGAR

Sugarcane is a plant that can be utilized very efficiently. After sugar is extracted, sugar cane trash (bagasse) is burned in boiler to be used as energy, and the residues removed in the sugar production process are brought back to the fields for use as fertilizer.

"When it comes to eco-friendliness, people tend to focus only on CO2 reduction, but sugarcane cultivation and the production of sugar is also friendly to soil and the global environment in that food residues are recycled in the process. It is a sustainable environmental activity that provides a reliable and safe food. This is organic in a broader sense."

All of their sugar comes from pure organic sugarcane syrup, which is characterized by its natural sweet taste.

Organic sugar has been used by a variety of food manufacturers raging from confectioners, to makers of jam, ketchup, seasoning soy sauce, among others

INDIAN SUGAR

HOW MANY GRADES ARE THERE OF #INDIAN SUGAR?

THERE ARE 7 GRADES OF INDIAN SUGAR WHICH HAVE BEEN DECIDED/APPROVED BY THE SUGAR TECHNOLOGIES ASSOCIATION OF INDIA AND INDIAN SUGAR MILLS ASSOCIATION, ETC. ORGANIZATIONS

The Sugar Technologists Association of India and Indian Sugar Mills Association, etc. organizations have approved the set of seven sugar standards in seven grades i.e. L31, L30, M31, M30, S31, S30 and SS 31.

While L, M, S and SS denoted crystal size as large, medium, small and super small, 31 and 30 represent the colour series with 31 being superior white.

All Specifications of Indian Sugar are subject to the Indian Sugar Standards, which are issued at the beginning of every sugar season (September-October) by the Government of India authorized institute.
